Australian M9 Wagyu Short Ribs 8oz
Introductory Tasting Special~~
Wagyu M8-M9 cuts are typically from the beef loin. Wagyu M8-M9 meat is tender and delicate, boasting a high-grade, evenly distributed marbling pattern like marble. It's sweet and juicy, with rich fat bursting on the tongue, providing a full-bodied texture.
These 0.5-inch thick steaks are perfect for grilling and pan-frying. The marbling runs through the muscle, making it tender, richly flavored, and full of unique taste.
The Australian Beef Marbling Score (M-score) is a globally recognized standard for evaluating beef quality, primarily based on factors such as marbling (fat distribution), meat color, fat color, and carcass maturity. Ranging from M3 to M12, a higher number indicates higher fat content, more even distribution, and more tender and juicy meat.
I. Core Indicators and Standards of the M-score
The Australian M-score uses marbling as its core standard, combined with parameters such as meat color and fat quality for comprehensive evaluation. Different grades have significant differences in feeding periods, fat content, and market positioning:
Feeding Days: M3 grade typically requires grain-feeding for 200-300 days, M5 grade extends to 300-400 days, and M9 grade and above require grain-feeding for 800-900 days.
Fat Content: Gradually increases from 10%-15% for M3 to 50% for M12.
International Comparison: M8-9 grade is approximately equivalent to Japanese A3 Wagyu.
